Wuhan is the capital of Hubei province, People's Republic of China, and is the most populous city in central China. It lies at the east of Jianghan Plain, and the intersection of the middle reaches of the Yangtze and Han River. 俗话说“民以食为天”，我对这非常赞成。
我可自己为“小小美食家”，因为我对菜颇番研究。
光菜名，我就可以滔滔不绝地说上百种。
北京的烤鸭、内蒙古的小肥羊、西安的羊肉泡馍、山西的刀削面……在这么多香甜可口的美食中，最让我喜爱的，便是山城重庆的麻婆豆腐。
麻婆豆腐不仅吃起来麻辣鲜香而且颜色五彩缤纷。
嫩白的豆腐丁排着整齐的“队”站在盘中，穿上了用鲜红的辣酱做成的“衣服”，看上去火红火红的一片，就像是一团熊熊燃烧的红色火焰，中间还夹杂着一些外酥里嫩的肉沫，绿色的葱花散落在盘中，就如同一片片绿叶，沾着辣酱的豆腐丁成了一朵朵盛开的红花，在绿叶的映衬下显得格外引人注目。
不时，从盘中散发出一阵阵诱人的香味，真令人垂涎三尺! 看上去，麻婆豆腐的做法是十分复杂的，其实非常简单：把豆腐切成一个正正方方的小块，让它们一个个“跳”入热气腾腾的水中热热“身”，再把它们捞出来，一会在用。
接着，把肉切成极小的块，用植物油把肉块抄酥。
然后，向锅里倒入适当的油，打开开关，向油中放入事先准备好的干辣椒、花椒和姜片，等油在七、八十度时放入豆腐丁，再加上适量的淀粉，翻抄几下，再加入适当的盐、黄豆酱、豆瓣酱，点上一点白酒，最后用小火慢慢烧两分钟，在快起锅时加入少许的味精，这道色香味俱全的麻婆豆腐就大功告成了! 吃麻婆豆腐也是很有讲究的。
吃时，先夹上一块豆腐，多沾一些盘中的辣酱，把它轻轻地放入嘴中慢慢地咀嚼，吃上去，麻麻的，辣辣的，这种味道一下充满了嘴的任何角落。
我吃的时候，喜欢先把豆腐上的辣酱舔一舔，顿时，辣酱的麻和辣味一下“扑”入嘴里，再吃豆腐，嫩嫩的豆腐从嘴里一过，顺滑爽口，这样的吃法，吃到了麻婆豆腐别具一格的风味。
如果你幸运的话，还能够吃到一点点的肉沫，外酥里嫩，更一步增添了麻婆豆腐的风味，起到了画龙点睛的作用。
