种子虽然在形状、大小、颜色等各方面存在着较大的差异，但其基本结构都是一致的。
都是由胚、胚乳和种皮三部分组成。
胚是种子中最重要的部分，新的植物体就是由胚生长发育而成的。
胚由胚根、胚芽、胚轴和子叶四部分组成。
胚根和胚芽的体积很小。

子叶与一般正常叶的功能是不同的，有储藏养料的作用，或能从胚乳中吸收、转化营养物质供胚生长时使用。
不同种子其子叶数目不同，在被子植物中分为两类：一类具有两片子叶，如瓜类、豆类、棉花、桃、杏、苹果等植物，称之为双子叶植物。
另一类只具有一片子叶，如小麦、玉米、水稻、甘蔗、高粱、百合、葱、蒜、姜等，称之为单子叶植物。
双子叶植物和单子叶植物是被子植物的二个大类，它们不仅在子叶数目上有差别，而且在其他器官的形态结构上也完全相同。
在裸子植物中，子叶数目也很不一致，有两个的如侧柏；有2～3个的如银杏，还有多个的如松树。
组成胚的细胞都是具有胚性的，这些细胞的特点是体积小，细胞质浓、核相对比较大，细胞质中没有或仅有小的液泡。
