Jiaozi (Chinese transliteration) or gyōza (Japanese transliteration) and also known as mandu (Korean),is a Chinese dumpling,widely popular in China,Japan,Korea,as well as outside of East Asia particularly in the United States.

The corresponding Chinese characters for "Jiaozi" is a reference to the arrival of the Chinese New Year at midnight.According to the Chinese calendar system,"Tiangan Dizhi" (Heavenly stems and Earthly branches) is used to designate the time in accordance to the Chinese zodiac."Jiao" in Chinese means "join," while "zi" is a reference to the first and eleventh hour (branch) of Dizhi - where midnight is situated.

Jiaozi typically consist of a ground meat and/or vegetable filling wrapped into a thinly rolled piece of dough,which is then sealed by pressing the edges together or by crimping.Jiaozi should not be confused with wonton:jiaozi have a thicker skin and a flatter,more oblate,double-saucer like shape (similar in shape to ravioli),and is usually eaten with a soy-vinegar dipping sauce (and/or hot chili sauce); while a wonton has a thinner skin,is sphere-shaped,and is usually served in broth.

The jiaozi is a common Chinese dumpling which generally consists of minced meat and chopped vegetables wrapped into a piece of dough. Popular meat fillings include ground pork, ground beef, ground chicken, shrimp, and even fish. Popular mixtures include pork with Chinese cabbage, pork with celery, lamb with spring onion, leeks with eggs, etc. Jiaozi are usually boiled or steamed. Jiaozi is a traditional dish eaten during Chinese New Year's Eve and some other festivals. Family members gather together to make dumplings. It is also eaten for farewell to family members or friends. Another type of Chinese dumpling is made with glutinous rice. Usually, the glutinous rice dumplings [zongzi] are triangle or cone shaped, also filled with some red beans, Chinese dates or a little meat. Glutinous rice dumplings are traditionally eaten during the Duanwu Festival. If dumplings are fried in a small amount of oil, they are called guotie or potstickers. Compared to wonton dumplings served boiled in a soup, jiaozi have a thicker skin and are bigger. Wontons are wrapped in rectangular dough while jiaozi are wrapped in round dough. Chinese cuisine includes sweet dumplings. Tangyuan a special type of rice dumpling. Tangyuan are smaller dumplings made with glutinous rice flour and filled with sweet sesame, peanut, red bean paste. Tangyuan may also be served without a filling. There are also other kinds of dumplings such as har kao, siew mai, small cage-steamed bun (xiaolongbao), pork bun and crystal dumpling. Making Dumplings

In my hometown, there is a tradition that every family would keep—making dumplings. We usually make dumplings on the last day of the lunar calendar and eat them on the New Year’s Eve. We roll the dough into pieces and prepare the stuffing. And then we can make dumplings. There is an important thing need to do in this period. That is we usually put coins into some dumplings. Those people who eat the dumping with a coin in it will get the best wishes for the next year. The final step is boiling the dumplings. At this time, all people are waiting for the dumplings. For us, it’s the best New Year’s Eve dinner.

1. 妈妈教我包饺子,先把馅放在里面,不多也不少,接着先捏紧一头,在捏令一头,就这样一个饺子包成了,这下我的像打玩胜仗回来的将军,我开心的笑了。

2. 我只好又拿了一张饺子皮涂上半圈的水,用筷子夹了一些肉陷儿,放到批上,把食指放到饺子皮后面,两个大拇指成八字形,然后用力一压。

3. 先把馅放在饺子皮中央,然后对折,再沿边捏紧,当然在捏的同时还可以捏出一些花样边。

4. 我拿着擀好了的皮儿放在手心,然后用勺子舀了一大瓢馅儿往皮儿中间放,两边对折,刚准备捏,只见馅儿争先恐后的往外挤。

5. 妈妈一边示范一边对我讲了包饺子的方法和应该注意的事项。我又重新拿起一张饺子皮,按照妈妈的方法去做,果真奏效。不一会儿,我便包了十几个饺子。

6. 学着爸爸的样子,先用筷子把馅放到皮上,然后将皮捏在一起,也许是馅放多的'缘故,怎么捏也捏不住,在爸爸的帮助下,好不容易捏住了。

7. 我先拿了一张饺子皮,摊在手上,又放了一些肉。最后,我把饺子皮折成了一个半圆形,用大拇指和食指轻轻地按几下边,使边合在一起。

8. 因为从来没有包过饺子,所以我开始包出来的饺子,都是东倒西歪的。经过妈妈手把手的教我包饺子,我的技术越来越好了。

9. 开始包饺子了,爸爸妈妈先包了十几个,我看了情不自禁地也包了一个,我包好之后和别的一比较,我包的饺子简直是个半圆形。

10. 我学着奶奶的样子,把肉馅放到皮的中间,然后再把面皮的外面捏到一起,一个饺子包好了。

11. 我先拿一块饺子皮儿放在手心,再把肉馅放进去,用手蘸一点儿水在饺子皮的最边上涂半圈,再对折捏一捏。一只饺子就做成了。

12. 妈妈已经包了十几个饺子,看上去,个个饺子都“身强体健”。而我急于跟妈妈比速度,所以包的饺子看上去瘪瘪的,好像一个个泄了气的皮球。

13. 教我要把饺子馅放得适中,不能过多,也不能过少,再把饺子皮对折,然后捏住饺子的一端向里打折,再捏拢,依次几下,一个饺子就做成了。

14. 妈妈把饺馅包在了面皮里,两手一合,饺子就包好了,圆鼓鼓的活像个大将军。

15. 我拿起饺子皮,用筷子夹起馅,小心地放在皮上,两手使劲一捏。
